Morning Glory Muffins Epicurious
Preheat oven to 350.

Fill greased or paper lined muffin cups two thirds full. Preheat the oven to 350 degrees f and arrange two racks evenly spaced in the oven. In a large bowl combine the first five ingredients. In a large bowl whisk together the eggs oil and vanilla.
Bake pecans in a single layer on a baking sheet 5 to 7 minutes or until lightly toasted and fragrant. Process until finely ground. Preheat oven to 350 degrees f. In another bowl combine the eggs applesauce oil and vanilla.
Stir into dry ingredients just until moistened batter will be thick. Add coconut and walnuts to food processor. I subbed coconut oil for olive oil and cinnamon for nutmeg. I m glad i found this recipe as most morning glory muffins are packed with oil and sugar might as well make a cake with that much.
Line two muffin pans with paper muffin cups. Coat liners with cooking spray. Lightly spoon flours into dry measuring cups and level with a knife. Place a paper liner in each.
These are almost like a carrot cake muffin but with no guilt. Cool for 5 minutes before removing from pans to wire racks. Preheat oven to 350 degrees f.
